Judith “Judy” Eileen Knieff age 73 of Crosby formerly of Bay Lake Township died on March 6, 2017 at the Hallett Cottages in Crosby. She was born on October 11, 1943 in Minneapolis to Paul and Signe (Olander) Meuwissen. Judy graduated from the Minneapolis College of Art and Design, class of 1968. She worked as a graphic designer and lived in Europe for a year during that time. Judy married Al Knieff on November 28, 1981 in Bay Lake Township. Judy and Al owned and operated Knieff’s Shore Acres Resort on Bay Lake. They made maple syrup there together for over thirty years. She enjoyed feeding the birds, planting trees, and building/painting cut out plywood figures for her Christmas lights display. She was a member of St. Joseph’s Catholic Church in Deerwood.
Judy is survived by two daughters, Erin (Justin) Smith and Kirsten (Vic) Harris all of Bay Lake; one brother, Bill (Suzy) Meuwissen of Fort Meyers, FL; one sister, Jean (Bruce) Bushey of Minneapolis and three grandchildren, Claire, Belle and Mary Smith. Her granddaughters were her greatest joy. She taught them her favorite songs and how to identify birds. Her time with them may have been limited, but it was filled with love.
Preceding Judy in death are her parents; her husband, Al and one granddaughter, Cora Violet Smith.
Funeral services will be 11:00 am on Thursday, March 16, 2017 at St. Joseph’s Catholic Church in Deerwood. Burial will be at the Bay Lake Cemetery. Visitation will be 1 hour prior to the services at the church on Thursday. Memorials are preferred to St. Joseph’s Catholic Church in Deerwood or to Hallett Cottages, Crosby. Arrangements are with the Koop Funeral Home in Crosby.
